Smoothie!

Featured

Blended So, I have been obsessed with smoothies lately because I bought a Nutri-Ninja.  At first I was a little frustrated because it would take me a while to put all the ingredients together each morning, but I figured out a great way to set up smoothies for the week after a week or two struggling.  This recipe I adjusted from the Nutri-Ninja recipe book.

This recipe has almost no fat in it, but it is high in carbs.  I think the high amount of carbs is offset by the the amount of good for you stuff that’s packed into this drink!  I throw in a scoop of protein powder because I’m trying to eat 30% protein and this is a great way to up the protein ratio.

Salad in a Jar – Chef’s Salad

8 Salad in a JarSo, as an I’m sorry to you all for not posting before, I present to you a two in one weekend!  Here’s one of the reasons why I started packing up stuff in jars, the infamous Salad in a Jar!

I tend to use these as a snack more than a lunch, cause they’re not a lot of calories.  Or you could combine this with a lower calorie soup for a more filling lunch. Continue reading

Lazy Lasagna VS Baked Pasta… Or… Baked Lazy Pasta Lasagna

Featured

8 CloseupSorry, this post is late…  I actually took the pictures for this three or four weeks ago, but I’m only now getting around to posting them.  Mostly cause I’m not super thrilled with the quality on the last ones, I ran out of natural light, and I forgot to take pictures of some steps.  I’ve had some really full weekends lately and haven’t been on this as I should be, sorry!  I also sprained my ankle last weekend so everything was quick and easy with no time to take pictures cause I didn’t want to be on my feet for very long.

So one of my favorite things to do is to take a recipe and fiddle with it to make it something more to my tastes.  Sometimes this means that I up the protein ratio, as in my Beef Stroganoff recipe, or something as simple as adding mushrooms since the person who originally posted the mushrooms doesn’t care for them.  I however do like mushrooms, so yeah, they go in…

Bacon & Veggie Egg Bake

Bacon & Veggie Egg Bake

Mmmm… Breakfast!   This tasty recipe is something I modified from Brooklyn Supper‘s Baked Eggs with Brussel Sprouts and Mushrooms.  I added a couple things, and baked ’em in a jar.  I haven’t made this one in quite a while, but it’s a great one, and I love it!

This recipe is high in fat, but super low in carbs.  Since I do flexible dieting (IIFYM), the rest of my meals for the day are pretty low in fat.  I think this is my favorite thing about flexible dieting.  It allows me to work my meals around what I want to eat, not skipping out on something because it’s not in my meal plan.  I’m still going to eat things that are ‘bad’ for you, just in smaller quantities.

Anyways, onto the recipe!

Baked Oatmeal with Blackberries

Featured

One of my favorite recipes and super easy for reheating.

Baked Oatmeal fresh out of the oven!  One of my favorite recipes and super easy for reheating, especially on cold mornings!

Sorry, folks, but this is not a jar recipe. *gasp*  I know.  But life happened this weekend, and I went to my sister’s to do some meal prep.  We did a meal that I do a lot, and we experimented with another that she had found.  I’ll get that one photographed and up as soon as I can because it was worth a repeat!

So for the loveliest, tastiest, makes me think I’m eating dessert for breakfast, Baked Oatmeal with Blackberries.  Blackberries are awesome.  They’re usually available year round (especially in LA), they have lots of great nutritional values, and are just so darn good!

Jars, jars, and more jars….

Featured

Jars are part of what I use for meal prepping.  Here are a couple of FAQ’s I’ve gotten when talking about what I do or how I do it.

Where do I find jars?
Grocery stores, online, garage sales.  Most canning jars are pretty interchangeable with lids.  They either have a regular mouth or wide mouth openings.  Or another type of lid altogether.

Where do I find lids?
Grocery stores & online.  I recommend using the white plastic lids.  They are meant to be reused, and do not rust like the metal lids do.  You can find them in regular mouth or wide mouth.
